Trás-os-Montes, is one of the most important producing regions of table olives in Portugal. In this region the production of table olives has a long tradition. Its tradition is well evident by the diversity of different kinds of table olives preparations by local growers along the territory. In the last years our research group was focused in the study of one specific kind of green stoned table olives known regionally as “alcaparras”. However, in the region there are different kinds of table olives that need to be characterized in order to protect them with the possible creation of one new Protected Designations of Origin (PDO) of “Azeitonas de mesa Transmontanas”.
