Workshop "Bread: Art and Tradition with Space for Innovation" will occur on February 15, 2020. This workshop addresses an overview of traditional Portuguese bread, scientific discoveries from which artisanal production can take advantages, including mixtures and not allowed flours, functional natural ingredients, and techniques for assessing the quality of dough and bread. In the afternoon session, a demonstration of two artisan breads will be performed. The workshop is organized by Nordeste Global and has the support of Professor Vasco Cadavez and Doctor Ursula Gonzales-Barron, CIMO-IPB and the “Arquivo Distrital de Bragança”, where the workshop will take place.
